Ingredients
  

Main ingredients

  • 3 pieces spotty bananas Make sure they are fully ripe with lots of brown spots.
  • 2 pieces eggs
  • 2 cups oat flour Can be made by blending rolled oats into a fine powder.
  • 1/2 cup coconut sugar Can be substituted with regular sugar if preferred.
  • 1/4 cup oil (avocado oil) Can be replaced with melted coconut oil or any mild-flavored vegetable oil.
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • a few shakes cinnamon
  • to taste chocolate chips For mixing into batter and topping.

Preparation

  • Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • In a large bowl, mash the bananas with a fork until smooth.
  • Add all ingredients except for the chocolate chips to the mashed bananas and mix everything well.
  • Stir in the chocolate chips, then pour the batter into the prepared loaf pan. Top the batter with extra chocolate chips.

Baking

  • Bake for 50-55 minutes, or until a toothpick comes out clean when inserted into the center.
  • Let the banana bread cool before slicing.

Notes

Serve warm or at room temperature. Can be enjoyed with peanut butter or almond butter. Store completely cooled banana bread wrapped tightly for up to 3 days at room temperature, or freeze for up to 3 months.
