  • 4 Potatoes Russet or Yukon Gold potatoes sliced.
  • 1 Cup Shredded Cheddar For the cheesy topping.
  • 1 Cup Sour Cream Optional for added creaminess.
  • 1 Onion Diced for flavoring the beef.
  • 1 tsp Garlic Powder For seasoning.
  • 1 tsp Onion Powder For seasoning.
  • 1 tsp Salt To taste.
  • 1/2 tsp Black Pepper To taste.
  • 1/2 tsp Red Pepper Flakes Optional for a little spice.

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x13 casserole dish with butter or cooking spray.

  • Add diced onion, garlic powder, onion powder, salt, pepper, and red pepper flakes to the beef. Stir and cook for 2 minutes.
  • Slice the potatoes evenly and par-cook them in boiling water for 5-7 minutes. Drain and set aside.
  • Layer the potatoes in the greased casserole dish, followed by the ground beef mixture.
  • Repeat the layering process until all ingredients are used.
  • Spread sour cream (optional) on top of the casserole and sprinkle with shredded cheddar cheese.
  • Cover the casserole with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 10-15 minutes to allow the cheese to brown and the casserole to become crispy on top.
  • Let it rest for 5 minutes before serving.

Notes

You can customize the casserole by adding vegetables such as peas, carrots, or corn for added nutrition.
For a lighter version, use lean turkey or chicken in place of ground beef and swap the potatoes for cauliflower for a low-carb version.
Leftovers can be stored in an airtight container for up to 4 days in the fridge.
