Ingredients
  

  • 4 pieces Chicken thighs or breast Bone-in, skin-on for extra flavor
  • 1 tbsp Sazon seasoning With coriander and annatto
  • 1 tsp Ground coriander Adds a citrusy earthy flavor
  • 1 tsp Ground annatto For color and a mild peppery taste
  • 1 tbsp Olive oil To coat the chicken for grilling/baking
  • 1 tsp Garlic powder Optional for added depth of flavor
  • 1 tsp Salt Adjust to taste
  • 1 tsp Black pepper Adjust to taste
  • 2 tbsp Lime juice optional Adds tanginess and freshness

Instructions
 

  • Prepare the chicken: Pat the chicken dry with paper towels. If using thighs, you can score the skin lightly to allow the seasoning to penetrate.
  • Make the marinade: In a large bowl, mix the sazon seasoning, coriander, annatto, olive oil, garlic powder, salt, pepper, and lime juice (optional) until well combined.
  • Marinate the chicken: Coat the chicken with the marinade, ensuring each piece is fully covered. Let it marinate for 30 minutes to 2 hours for best flavor.
  • Cook the chicken:
  • Grilling: Preheat the grill to medium-high heat. Grill the chicken for 6-8 minutes per side, or until fully cooked.
  • Baking: Preheat the oven to 375°F (190°C). Bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  • Pan-frying: Heat oil in a skillet over medium heat. Cook the chicken for 6-8 minutes per side, until golden brown and cooked through.
  • Serve: Let the chicken rest for a few minutes before serving. Pair it with a side of rice, beans, or a fresh salad.

Notes

  • You can substitute chicken breasts for thighs if preferred, but thighs tend to stay juicier and more flavorful.
  • This recipe works great for meal prepping! Store any leftovers in an airtight container for up to 3 days.
  • For a spicier version, add chili powder or cayenne pepper to the marinade.
