Preheat your oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and brown the ground beef (or chicken). Add cumin, chili powder, and salt to taste.
Warm the corn tortillas until soft.
In a baking dish, spread a thin layer of enchilada sauce. Then layer tortillas, meat, sauce, and cheese. Repeat layers, ending with cheese on top.
Cover with foil and bake for 20–25 minutes, then remove foil and bake for an additional 5 minutes to melt the cheese.
Garnish with cilantro and serve with a side of sour cream.
