Ingredients
  

  • 1 lb Ground beef Or chicken for a lighter option
  • 10 count Corn tortillas Use breakfast enchiladas recipe corn tortillas for extra flavor
  • 2 cups Enchilada sauce Can be red or white sauce
  • 1 cup Shredded cheese Cheddar or Monterey Jack
  • 1 tsp Cumin For added flavor
  • 1 tsp Chili powder Adds spice and depth
  • 1 tbsp Olive oil For sautéing the beef
  • 1 cup Sour cream Optional topping
  • 1 tbsp Fresh cilantro Garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and brown the ground beef (or chicken). Add cumin, chili powder, and salt to taste.
  • Warm the corn tortillas until soft.
  • In a baking dish, spread a thin layer of enchilada sauce. Then layer tortillas, meat, sauce, and cheese. Repeat layers, ending with cheese on top.
  • Cover with foil and bake for 20–25 minutes, then remove foil and bake for an additional 5 minutes to melt the cheese.
  • Garnish with cilantro and serve with a side of sour cream.

Notes

  • For a vegetarian version, swap out the meat for beans or grilled vegetables.
  • You can prepare these enchiladas ahead of time and refrigerate overnight before baking.
  • For extra heat, add green chili breakfast enchiladas to the filling or top with chili peppers.
